Breakfast is a big deal at our house these days. The littlest man's appetite is somewhat limited and when he asks for "breakfast" he's already opening the freezer because he is on the hunt for his Eggo Waffles or Pancakes. We try to introduce him to a variety of foods, but his favorite is breakfast...hands down! I don't mind though because there are so many things you can do with waffles to get those fresh foods in them too! On a typical morning, I will heat his waffle and add banana or strawberries with a drizzle of syrup or honey. He gets yogurt on the side many days to get a little protein in him to make it through the morning.
So, for a special weekend treat for the family, I created a mini waffle bar and served it on our new buffet!
Our Waffle Bar included:
- Eggo Buttermilk Waffles and Eggo Wafflers Brown Sugar Cinnamon Roll
- Eggo has a new formulation that is free from artificials. All Eggo products are now made with colors and flavors from natural sources.
- Oven Baked Bacon
- Whole Milk
- Orange Juice
- Fresh fruits
- Homemade Strawberry Syrup (recipe below)
- Homemade Blueberry Syrup
- Powdered Sugar
- Eggs (for the hubby - not pictured)
To add a little something fresh, I took a little departure from traditional syrups and made homemade fruit syrups! Each fruit will cook a bit differently but you can substitute just about any favorite fruit and make a delicious syrup for Waffles, Pancakes and even spritzers. It's pretty simple too. If you can boil water, you can make syrup!
Homemade Strawberry Fruit Syrup
- 1 1/2 cups diced strawberries
- 1/3 cup Agave Syrup (or 1/2 cup granulated sugar)
- 1/4 cup water
- Optional 1 tablespoon lemon juice
- Add diced strawberries, sugar and water to a stainless steal pot on the stove, bring to a boil and cook over medium heat, stirring often for 10 minutes. Once you remove the syrup from the heat it will continue to thicken once it begins to cool.
- For a thinner syrup or for beverages, cook strawberries with water and lemon juice then pour over a strainer into a bowl or jar. Return liquid to pot, add sugar, heat until dissolved.
- For fruits with skin, like blueberries, while heating use the back of a ladle or spatula to burst blueberries as they heat.
Then serve up that yummy goodness! We only had enough for this meal but double the recipe and you can refrigerate it for about a week (lemon juice helps it keep longer).
